Koulouria or Matsi by Rhodian Products

It’sthemostfamouspastaofRhodes, andwefindseveral variations under different names, in most of the island’s villages. It is also the most traditional dish served at weddings.

 

Ingredients (makes 4 servings)

2 pounds of mutton broth

1 package of traditional KoulouriaGisKatavias

1 tablespoon of salt

1 cup of vegetable shortening

grated cheese

Method

Boilmuttoninadeepsaucepantomakemuttonbroth. AddtheKoulouriaandletit simmer over low heat for 45 minutes. In a small frying pan, bring the shortening to a fast boil, drizzle it over the Koulouria, add the grated cheese and serve while hot.
